Blush Hot Toddy Christmas Cake

We’ve swapped out the dark rum from Nigella Lawson’s classic Easy-Action Christmas Cake with our spicy Hot Toddy Gin, infusing the cake with citrus, honey, and warm spice notes that will make your holiday bakes unforgettable.

Ingredients
- 775g mixed dried fruit
- 175g unsalted butter
- 250g dark brown sugar
- 1 x 250g tin chestnut purée
- 125ml Blush Hot Toddy Gin
- Zest and juice of 1 orange
- Zest of 1 lemon
- 3 large eggs (beaten)
- 250g plain flour
- ½ tsp baking powder
- ¼ tsp cinnamon
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg

Preheat the oven to 150°C (130°C fan) and line a 20cm round cake tin with greaseproof paper.

Simmer the fruit mixture: In a large saucepan, combine the dried fruit, butter, sugar, chestnut purée, gin, orange juice, and zests. Bring to a boil, then simmer for 10 minutes. Let it cool for 30 minutes.

Mix the batter: Stir in the eggs, flour, baking powder, and spices until well combined.

Bake: Pour the mixture into the prepared tin and bake for 1¾–2 hours until firm and slightly cracked on top.

Feed the cake (optional): Once out of the oven, poke the top with a skewer and drizzle over 3 tablespoons of Hot Toddy Gin for an extra boozy kick.

Store: Wrap in greaseproof paper and foil. This cake will keep for up to 2 months in a cool, dark place. Perfect for making ahead!
